Default What kind of cheese have you made

I may make my own cheese someday. I have googled it some and there is a winemaking forum that I joined that has a cheese making section.

I know that making Mozzerella is fairly easy. What other cheeses are reasonably easy/ What are pitfalls related to making your own cheese?


( I realize that many of you will be making comments regarding "cutting the cheese" and other stupid comments. That is to be expected and it would not be off topic if you did. However, some serious comments will be very much appreciated )

I think you knew the answer to this before you posted.

You know Tim, you are correct. I should have thought of that. I should have known all the wiseacres would not be there. But then, it would not have been as much fun.

I will do that someday. If I did it now, there would be a mass exodus to the recipe forum for a little more

I have made whole milk ricotta on several occasions. Very easy and tastes great.

You can use any kind really. I use whole milk but you can use part skim, etc. I've only used cow's milk BTW. Some lemon juice, etc.

I've only seen it done in massive commercial amounts. How do you do it at home and what quantities of milk etc, are required to make how much cheese?

Nope, cheese requires casein which is only found in milk and rennet, which is an enzyme found in the stomachs of baby ruminating animals.
However you can make plastic out of soy milk!
