That's how they talk. I learned from my 89 year-old lunch buddy, who worked cracking Korean military code at the NSA during the Korean War.

All my life I always thought a Chink was a Chink. He pointed out the facial differences between true Chinks and the Japs, Koreans, Viet Namese, etc. I'm not as good at it as he is, but I can see some differences now.

There was a Seinfeld episode (back when you could still joke about this stuff) where he went on a blind date with a woman named Donna Chang. She was not Oriental in the least, as he assumed.

And they were talking about "the rines are crossed" regarding bad phone lines.

And Jerry thought she said something was "redicurous," (and she did say that) so he asked her again and she denied having said it.

Hopefully @Vandelay Industries will confirm this.
