Default Oh dear!

Had four of these guys all hanging around in one of my cow fields the other day. It's that time of year when the males all hang together. Look a little to the right of the one and you can see the rack of his buddy. Every time I went to press the shutter button, he kept ducking his head. This was taken with a 300mm lens through a screen, so it's not the best quality. Two of them were easy trophy bucks.

I am a huge fan. The secret is to hunt in an area where the deer are not eating sage brush or other strong plants, to process it asap, and mainly, and this is important: Do NOT overcook it! Rare is best. If overcooked, it gets tough and tastes like liver. Americans tend to overcook the shit out of their meats, pretty much ruining it.

I learned the hard hard to just flash elk over a flame. Haven't had the opportunity to try deer since I was younger. Here in Utah, we have a ton of sage so it's hard to find it without.

I have deer in athe backyard as well, and I can throw a shoe at them.

Actually the secret is to age the meat prior to freezing it. Just like is done with pork and beef. Most people have their deer packed away in a freezer within a couple days. I recommend 1-2 weeks (depending on temperature). I've cooked venison that tasted no different than beef. It's just a lot less greasy

Meat doesn't go straight from the farm to your oven and you shouldn't do that with meat from the woods either.

Starting in a early Sept and up until winter we have to be cautious as maiting season gets underway.
Generally elk will rut in September here.
Moose usually rut in late September and into early October.
Deer rut in November.
A pissed-off horny bull of any of the three above can really ruin your day if you put yourself in a vulnerable position.
