We have custom knotty alder and I'm thankful they did a pretty good job with grain.

OP, I would not trust anything adjustable for router use. Get a flak jacket if you decide to use adjustable. I have a pretty good plunge router, but I think it's eons away from cabinetry work. Premium router, premium bits and a solid table would be in order if I ever considered making cabinets for my home.
