I used to sell sweet potato fries at outdoor festivals, concerts etc.
I had 2 40# deep fryers from an old pizzeria and I made a heavy wood table with a potato witch on one end.
I'd have a "lovely assitant" cut the ends of the sweet potato and I'd ram it through the witch and the kids all loved the show.
Fried them in all Canola oil and served them with all sorts of toppings.
For really good/busy shows, I could turn $1k profit for the day.
