Hey Al ....to me it's like all my tools. you buy the best ones you can afford and you'll never have to buy another one in your life. I bought a complete set of the black handled henkels 30 years ago and save one or two nicks in the handle from touching a hot element....they're still like new.

i bought mine when they went on sale for half price. 7 plus the cleaver and steel.

If however you plan on leaving them where they could get stolen, don't bother.....they're a hot ticket item on thieves list.
In my restaurant I used a rental knife company. for peanuts they dropped in brand new sharpened sets weekly. I still have some of them and they work great too.
