Have you worked with the epoxy fillers yet? Maybe it can be used of the knot areas???
there are a few small spots on your board where some dumbass made a screw hole..... ...... and in order to make the board as large as requested, i had to use and save these areas, so i took some mixed sawdust and some glue, mixed them together and used a putty knife to stuff the hole full. they dried up overnight, and they are fine now. if you look closely, you'll see them, but they are near the edges.

i've also used bar top epoxy for other projects, but i think it would chip and be hard to finish well, so i don't use that on cutting boards.
