there is a local farm that also sells yak meat and it is fantastic...higher in iron, protein, minerals, Omega-3s, CLA, etc while being lower in saturated fat, cholesterol, and calories.
Most people who enjoy bison tend to enjoy yak meat as well...has more of a milder, sweeter flavor, not gamey at all.
That being said, I still would love to order that flight of Wagyu
