When my wife and I make a ham for the holidays, we will typically eat off it for a few days until we tire of it. I will take it and vacuum seal the bone that still has a pile of ham on it and freeze it. When bad weather rears its head, I will pull it out, thaw it, and make ham soup off it. I use dried beans and omit the tomato in favor of a couple of large carrots sliced up. Try adding some thyme to your recipe one time. I find that the flavor of thyme greatly enhances a bean soup.
