Default Oyster filling ( stuffing / dressing )

One of my favorite sides for a holiday meal is oyster filling. It's extremely easy to make and tastes great

Here's what is needed ( milk not in the picture )


Here's the recipe out of the Mennonite Cookbook. I use more crackers and less salt than written.



I use a 1-1/2 quart glass baking dish and butter the bottom and sides


Crush OTC brand crackers and make a layer on the bottom


Add one dozen oysters ( save the juice ) and half of the butter. Add salt if desired and fresh ground pepper.


Cover with another layer of crushed OTC crackers


The other dozen oysters ( save the juice ) and the rest of the butter. Add salt and fresh ground pepper. That's a couple of the OTC crackers to the left


Cover with the final layer of crushed OTC crackers and add the juice from the two dozen oysters at this time.


Fill up with milk to the edge. Allow to soak for two hours and keep topping off the milk as needed. Put in the refrig for soaking.




Cook for one hour to one hour 15 minutes at 350* F


Prep time was 25 minutes working by myself and crushing the crackers by hand. It reheats very well and tastes even better the second time
