Are props all the same size? Is a plastic one ok for just emergency use or can one be used all the time ? It seems that being able to just change out a fin or two as needed is a good idea. Is that even a real thing ?

Yes, it's a real thing. My SIL's boat came with a plastic prop and it's the only kind it's ever had.
