I've tried many different ways including chipping the old plaster out. A bit easier with the old horse hair plaster walls.

Honestly, the easiest way I've found to do it is to sawzall every other stud horizontally then use the lath strips as leverage to remove large chunks of plaster without it crumbling.

Downside is it's heavy as hell but using a hand truck we walk out the chunks and throw 'em in the dumpster.
