Most (all ?) A/C units have a float cutoff switch in pipes connected to the drain pan, to stop operations if they detect excessive moisture - but, they don't always work. In most places, especially Florida, a once a month dose of bleach down the A/C drains is the ticket. Algae can build up in drain pipes in mere weeks with the heat and humidity in the state.
A sensor in the drip pan WILL detect water and produce a false alert, some condensation there is normal. A leak detector like this
under the pan/air handler works great; mine has saved me grief at least twice:
