They really make a difference. You can adjust the sky with post processing, but if it's blown out when it comes out of the camera, not much you can do.
I recommend the square/rectangular ones instead of the screw in filters. A lot more flexible and similar in price. Lots of really inexpensive ones on Ebay or check out 2filters.com -- good people and good stuff. If you shoot super wide angle, like 10mm or 11mm on a crop camera, you need a big filter (100mm instead of 85mm) or it will encroach on the frame.
