Lived in Japan decades ago. Ramen/gyoza was always my go to. There is no comparison, but this Toki Underground joint in DC comes damn close.

Looks good. :seasix: I'm pretty open to anything. My friend Dipthika makes homemade peasant Indian food, many dishes with curry and I love them. I would be happy to try the Japanese version as well. :yesnod:

I never soft boil my eggs... I just crack two raw eggs directly into the piping hot broth. I’ve done it that way forever.. probably learned it from my mother.

Never thought of that. The marinated soft/medium boiled eggs are also game changers IMO. Made em a couple times. So good.

We do the raw egg thing for sukiyaki. Been thinking of making it. Looks easy enough. Watched my mom do it a hundred times. Need an electric skillet first.
