Surprise your wife with this fancy brunch...

Brioche with Prosciutto, Gruyerre, and Egg

One 1-inch-thick slice of brioche
1 tsp unsalted butter, plus softened butter for brushing
1 ounce frisee, torn into bite-size pieces
1 tsp parsely leaves
1/2 scallion, thinly sliced
1 tsp fresh lemon juice
1 tsp extra-virgin olive oil
Kosher salt and freshly ground pepper
1 large egg
Enough thinly sliced Gruyerre cheese to cover the brioche
2 thin slices of prosciutto

Preheat the broiler. Brush both sides of the brioche with softened butter. Broil the broiche, turning once, until lightly toasted.

In a bowl, toss the frisee with the parsley, scallions, lemon juice, and olive oil. season with salt and pepper.

Melt the butter in a non-stick skillet. Crack the egg into the skillet and cook sunny side up over medium heat until the white is firm and the yolk is runny.

Top the brioche with the Gruyerre. Broil until the cheese is melted, and transfer to a plate. Top with the frisee salad, prosciutto, and fried egg and serve at once.

You're gonna get some....

Let's get real, There ain't no way in hell that you can get brioche or frisee in Jackson Ms. I bet a dollar to a donut you substituted cornbread and turnip greens.

And Scallions, I know damn well you used green onions.
