Garbanzo beans 1 can
Black beans 1can
cilantro 1/4 cup
parsley 1/4 cup
Onions 1/4 cup
Celery 1/4 cup
bell pepper 1/4 cup
tomatoes 1 cup
Avacados 1

Dressing
Garlic 2 cloves
Lime Juice 3 tbsp
Olive oil 1tbsp
Cumin 1tspn

That sounds great. I'm planting a lot of parsley and cilantro this spring, and that sounds like a good thing to do with some of it. I'll have fresh tomatoes, too.:seasix:

1. Spicy Carrot Salad: Microwave grated carrots and minced garlic in 1/4 cup water until crisp-tender. Drain; toss with lemon juice, olive oil, salt, red pepper flakes and parsley.

2. Asian Apple Slaw: Mix rice vinegar and lime juice with salt, sugar and fish sauce. Toss with julienned jicama and apple, chopped scallions and mint.
