Blue Cheese Stuffed Pork Chops
 
I've had this recipe around for a while and just had it the other night so I thought I would post it up for y'all. It is yummy! :drool:

Ingredients
  • 2 boneless pork loin chops, butterflied
  • 4 ounces crumbled blue cheese
  • 2 slices bacon - cooked and crumbled
  • 2 tablespoons chopped fresh chives
  • garlic salt to taste
  • ground black pepper to taste
  • chopped fresh parsley for garnish
Directions

1. Preheat the oven to 325 degrees F°. Grease a shallow baking dish.

2. In a small bowl, mix together the blue cheese, bacon and chives. Divide into halves, and pack each half into a loose ball. Place each one into a pocket of a butterflied pork chop, close, and secure with toothpicks. Season each chop with garlic salt and pepper. Keep in mind that the blue cheese will be salty. Place in the prepared baking dish.

3. Bake for 20 minutes in the preheated oven, or it may take longer if your chops are thicker. Cook until the stuffing is hot, and chops are to your desired degree of doneness. Garnish with fresh parsley and serve.

My oven cooks hot so I only baked them for 17 minutes and they were delicious.

how much of a mess does the filling make? too much to do on a grill or smoker?

Actually it did quite well for me but I did them in the oven in a casserole dish. Not much, if any, came out. Just make sure to use enough toothpicks to "sew up" the edge.

I'm sure I don't have to tell you but use a drip pan, just in case. :D

They are absolutely delicious. :drool:

Believe you me, they are. If you like blue cheese, even a little, you'll love these.

Alton Brown made some with three different kinds of blue cheese on his show Good Eats. I've been meaning to try this. Looks incredible.

Eating my stuffed pork chop now! Really good! Had to cook mine longer due to being very thick cut and I like it well done. :seasix:
