Oven fried green tomatoes
did this today. Big green tomatoes, soaked in buttermilk, coated with panko crumbs, salt, pepper and onion powder, baked 35 minutes, Damn good and not fried.

What temp? sound a lot healther than pan fried but how about crunchy?

I did them at 400. I omitted an important thing. Place them on a cookie cooling rack while cooking.
