Oyster filling ( stuffing / dressing )
One of my favorite sides for a holiday meal is oyster filling. It's extremely easy to make and tastes great :drool:
Here's what is needed ( milk not in the picture ) http://img.photobucket.com/albums/v7...9.jpg~original Here's the recipe out of the Mennonite Cookbook. I use more crackers and less salt than written. http://img.photobucket.com/albums/v7...8.jpg~original I use a 1-1/2 quart glass baking dish and butter the bottom and sides http://img.photobucket.com/albums/v7...0.jpg~original Crush OTC brand crackers and make a layer on the bottom http://img.photobucket.com/albums/v7...1.jpg~original Add one dozen oysters ( save the juice ) and half of the butter. Add salt if desired and fresh ground pepper. http://img.photobucket.com/albums/v7...2.jpg~original Cover with another layer of crushed OTC crackers http://img.photobucket.com/albums/v7...3.jpg~original The other dozen oysters ( save the juice ) and the rest of the butter. Add salt and fresh ground pepper. That's a couple of the OTC crackers to the left http://img.photobucket.com/albums/v7...4.jpg~original Cover with the final layer of crushed OTC crackers and add the juice from the two dozen oysters at this time. http://img.photobucket.com/albums/v7...5.jpg~original Fill up with milk to the edge. Allow to soak for two hours and keep topping off the milk as needed.
