I am getting better at this
This week I am making up 17# of a Conecuh Cajun style sausage. I have been casing all of it this morning but ran out of sheep intestines. I am soaking some pig intestines now and will continue with that once those are ready. Recipe to follow... I need to update my notes. |
Family (G folks) use to make sausage this time of year. Potato and meat (Pork). Even had a smoker shed out back. Made for great Easter meals

Looks good. I do miss my families old country (Eastern Europe) style of family cooking, unfortunately, no one's around anymore.
