Chicken burritos?

I have some left over chicken I want to make some chicken tacos for tomorrow night. I pressure cooked a whole fryer tonight and it turned out pretty well, but it was fast and dirty so there's very little seasoning. I'd like a recipe on stewing the leftover meat with some mex seasoning for my tacos. Some black beans, cheese and home made pico and tomorrow should be rockin'. Any hints on the meat?

Stewed, even totally unseasoned, chicken meat is perfect for enchiladas. You don't need to do anything more than add some ingredients and heat it back up. The thread I linked to will work perfectly with chicken instead of shredded pork.

I use Old El Paso taco seasoning mix on chicken for chicken tacos.
