View Full Version : My wife is making salsa Saturday-- recipe missing any key ingredients?

Mary will be canning salsa on Saturday, here's the recipe she'll be using
Zesty Salsa | Spicy Salsa Recipe - BallŪ Fresh Preserving (http://www.freshpreserving.com/recipes/zesty-salsa)

You Will Need:
● 10 cups chopped cored peeled tomatoes (about 25 medium)
● 5 cups chopped seeded green bell peppers (about 4 large)
● 5 cups chopped onions (about 6 to 8 medium)
● 2-1/2 cups chopped seeded chili peppers, such as hot banana, Hungarian wax, serrano or jalapeņo (about 13 medium)
● 1-1/4 cups cider vinegar
● 3 cloves garlic, finely chopped
● 2 Tbsp finely chopped cilantro
● 1 Tbsp salt
● 1 tsp hot pepper sauce, optional
● 6 BallŪ (16 oz) pint or 12 (8 oz) half pint glass preserving jars with lids and bands


She picked up some jalapeno peppers so they will be hot enough for her.

Anything you add to your salsa recipe that's missing in this one?

Looks good to me. I sometimes like to add black beans and corn.

Double the garlic and hot pepper sauce. Even though she's putting in green jalapeno peppers, they aren't very hot especially when cooked. Soak your cilantro in water while you prep; it take out that "cilantro bitterness". Add lime juice.

Leave some seeds in if you want extra heat. A bit (just a bit) of coarse ground black pepper will add dimension to the flavor.

:iagree:.....with Spence, plus, I'd substitute lemon or lime juice instead of vinegar, to taste. Both are acids. i also like a good hit of cumin in mine. :thumbs:

For me, leave out the cilantro. Also, something's off on the number of jars: recipe has about 25 cups of ingredients, but the specified number of jars gives 12 cups of storage. The ingredients will not cook down by half.

Last year my wife made green salsa. I don't have the recipe handy, but it was just a recipe she found on the internet. It called for Tomatillos, but she used green tomatoes instead and it turned out great. It was a great way to use up all the green tomatoes we still had on the plants that were going to be ruined by the first frost. We've got plenty of them this year, too.
