What is "Scrapple?"

I've seen it in stores.......just curious.

Scrapple is ground pork, corn meal and a few other spices ( depending on the cook ) cooked in a large pot then formed in pans for sale.

The better scrapples only use the best quality meat.

The only real secret to cooking scrapple is not to mess with it while cooking if you like the golden crust. Let it go for 8 minutes ( adjust time according to heat ) and flip it over to cook the other side. Some people like it with apple butter or catsup/ketsup.

We had some friends that stayed over night last night so I made a big breakfast. Took some left-over smoked red potatoes (cubed), sauteed some onion, jalapenos, mushrooms, added crush red pepper and black pepper to that. Buttered a deep pan, layered the potatoes, then the cooked veggies, some chopped ham, and 8 eggs beat together with a cup of cream, cayenne pepper, and black pepper/salt. Folded two cups of fresh grated smoked gueyere cheese into the egg mixture, then poured that on top of everything. Baked at 375 for about 40 minutes, then ate it with more hot sauce on top. Yum.

Home made cheesey hash brown caserole (like the stuff at Cracker Barrel)
Chocolate milk :D

And the dog gets the bacon grease poured over his dog food along with two pieces of bacon :yesnod:

Oh, and I took the brisket that I smoked off the smoker this morning, rearranged it for grilling, and cooked two boneless chicken breasts and a pork tenderloin for later this week. Put on some more potatoes to smoke. I have another brisket in the fridge that has one more day in the wet cure before I make pastrami out of it. Taking the brisket and a smoked turkey over to a friend's house for the Superbowl party. I've been a cooking fool the last few days, being snowed in and all here. :D

:lolsmile: Our next door neighbor, John Clemens was president of Hatfield Packing. My mom ( who grew up in southern CA ) asked him what was in scrapple.

He smiled and said " Everything but the oink. As soon as we can figure how to get the oink in, we'll put that in too" :lolsmile:

I did watch a show on Food Network where a guy who ran a diner made scrapple out of roasted pork shoulder. It looked really tasty...and not an oink in sight!

The scrapple I get is from Blooming Glen Meats. They've won all kinds of awards for their pork products and many for their scrapple. They use only good quality meat and other ingredients. That's why it tastes so good.

Put all kinds of grizzle and crap in it and it'll taste like crap. :nono:

Custom cabintes, granite, double oven, micro, dish washer, converting from electric to gas cooktop, downdraft (all stainless), all new tile paint and lighting, plasma on the wall, redoing the half bath to match with the same custom cabinets granite and tile...
