I see a potential problem though. Those samples were perfectly clean. All those microgrooves may be hydrophobic but not when contaminated with dirt/dust/debris. I'd like to see what happens when you rub a little dirt on that and then drop the water on it.

I assume they're using real water, as in h2o and not te shit that falls from the sky or from the faucet...I wonder what affect the other minerals that is often found in water, or even salt for that matter would do to the surface.

Nothing good I would assume.

Their use of an obviously used non-stick pan speaks volumes too. Get a brand new non-stick pan and that water will bead like crazy.
