Ingredients
Cooking spray
4 cups baked potato chips
1/2 teaspoon cayenne
1 cup lowfat buttermilk
1/2 cup plus 2 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1 to 2 large Vidalia onions, peeled
Here is something I want to try as I do not eat fried foods. This is from the Cooking Network, Ellie Kreiger. I am going to put directly under the broiler after cooking to see if they will crisp up and brown a little more.

Directions
Preheat the oven to 450 degrees F.

Spray a baking sheet slightly with oil and set aside. Place potato chips in the bowl of a food processor and process into crumbs, about 20 seconds. Transfer to a shallow bowl, add cayenne, and set aside. In another bowl, combine buttermilk, 2 tablespoons of flour, salt and pepper and set aside. Slice onions into 1/2-inch circles and separate into rings, keeping only large, whole rings (reserve rest of onions for other uses). You should come out with about 12 to 14 rings.

Place the remaining flour in a sealable plastic bag, then add onions, and shake to coat. Dip onions 1 at a time into the buttermilk mixture, then dip into potato chip crumbs and place on baking sheet. Spray canola oil evenly over rings and bake for 20 minutes, or until coating is crisp. Season with salt, to taste, and serve immediately.

I have a recipe from Rocco DiSpirito for oven baked onion rings that actually look good. I think the key is to use panko (japanese-style bread crumbs) to maintain that crunchy texture. If I get the chance, I'll post the recipe.

I immediately thought about panko when I saw the potato chips in the recipe.

Think I could swap out the buttermilk with half and half? I have everything but the buttermilk and now I really want to make these. :o_o:

I don't think it would cause any problems.

:cheers: I think I only have whole wheat flour too...

Just remembered I don't have enough panko. :kick:

SUPER yummy! I changed the recipe up a little...I used whole wheat flour because that is what I have. I used half and half for the same reason. And I used panko. I tried it first but the breadcrumbs would not stick to the onions. :toetap: So I added an egg to the wet batter and I gave the panko a few quick pulses in the Magic Bullet. I wish I had added a touch more cayenne but other than that they were FANTASTIC!

BTW - Mine were done in just over 15 minutes. :cheers:
