Here is something that makes a pretty good vegetable side dish. It is from canned artichoke heart quarters but you can use frozen, I don't know how frozen would be, perhaps better. The measurements are approximate:
Two cans of quartered artichoke hearts
about a tablespoon and a half of capers
A tablespoon of olive oil
a thinly sliced red onion
about 5 to six cloves of garlic, minced
an herb or two of your choice. I used basil
Juice of a large lemon
Chopped walnuts
sea salt and ground pepper. easy on the salt as the canned artichokes and capers are salty
Toss it together good and place on foil lined baking sheet
Roast at 375 for about 15 to 20 minutes - just keep an eye on it.
