View Full Version : I need casserole dishes or what I refer to as dump recipes

I am working a long stretch at work and there is no way I am cooking every night. What recipes do you have that I can make ahead and freeze? :popcorns:

I do lasagna, meatloaf (i've had some good experience doing two servings in a mini-bread pan), baked Ziti, and if you like making pasta - cheese ravioli. Soups are always good, I have a mulligatoni soup that freezes really well. Let me know if any of these sound good and I can post up the recipes.

It's a recipe I got from my mother who got it from my father's mother...

Mulligatawny soup

Saute - -not brown – in 1/4 cup butter or olive oil:
• 1/2 cup diced onion
• 1 cup diced carrot
• 2 stalks celery- diced

Stir in 1 1/2 Tablespoons flour and 2 teaspoons curry.

Stir and Cook for 3 min.

Pour in and simmer 30 min 4 cups chicken broth.

Add
• 1/2 cup cooked rice
• 1/2 cup diced cooked chicken
• 1 teaspoon salt
• 1/2 teaspoon pepper
• 1/3 teaspoon thyme
1 tart apple diced. (You can let it cook for longer and use more chicken if you want).

Simmer for another 15 min.

It freezes really well.

Have you tried freezing ice water? It's perfect on those hot Summer days! :hurray:

Not exactly gourmet, but you could live on it......cooked macaroni, tuna, canned mushroom soup, toss in some veggies, a little cream, top with cheese, bake, .....dinner. Just like June Cleaver.....:lolsmile:

As a matter of fact, I already have that one under my belt. (oh...literally :leaving:)
I also use ground beef, frozen peas mixed in at the last minute, and then tater tots on top, and bake .
Kids always like to eat this if you call it "Poppin' pea Casserole" The peas pop when you bite into them..kind of fun. :)
