Privacy and Legacy Question: What happens to data in cars, with Sync, and other sys.?

With Ford Sync, powered by Microsoft and the other systems which log calls on large NAV/Info screens, what happens to the data when one sells the car, or it's otherwise disposed.

Furthermore, speaking of data, do companies buy-back the EDR devices, especially insurance companies looking to data mine?

I don't permanently store anything in the car except music. It syncs the address book from my phone every time it pairs and deletes it when I turn the car off.

I'll leave my phone numbers in my truck when I trade it/sell it. If anybody wants those numbers, they can have them.
