Off-season watermelons just aren't as good as what you can get in the summer, obviously. This is a great recipe for off-season watermelons.
Grilled Watermelon Slices with Honey-Lime Syrup
Watermelon slices
Honey for brushing the watermelon
Honey-Lime Sauce...Mix together:
Juice of 2 limes
Zest of 1/2 lime
3 tablespoons honey
2 teaspoons water
A few dashes of cayenne pepper
A pinch or two of salt
DIRECTIONS
Preheat grill to high.
Cut watermelon into 1-inch-thick slices.
Brush each side lightly with some honey and place on grill.
Grill until just browned, about 2 minutes per side.
Place watermelon slices on a plate and drizzle with the honey-lime sauce.
Tip I've learned after making this: Make sure the grill is very hot. This will make sure you get nice grill marks, without having to leave the watermelon on the grill too long.
Also, this is great cut up and put on a salad (or simply a wedge in the side of the salad) with blue cheese crumbles and candied walnuts (http://www.thevettebarn.com/forums/whats-cooking/59217-were-gonna-need-bigger-batch-candied-walnuts-recipe.html#post1071591). The tartness if the blue cheese goes well with the sweetness of the watermelon. Raspberry vinaigrette (http://www.thevettebarn.com/forums/whats-cooking/59219-raspberry-vinaigrette-grilled-watermelon-candied-walnut-salad.html#post1071597) over the whole salad...delicious.
Or mixed in with a traditional caprese salad, drizzled with a good balsamic vinegar.
