Does anyone know if it's okay to can green beans using the waterbath method instead of a pressure cooker.
I read some recipes that say it's ok and some that say it's not.

I have 10 gallons of green beans. I was going to borrow MIL's pressure cooker but the gasket doesn't look so good. I can't get a gasket tonight.

Mom used to can green beans with waterbath for years with no problem.

I did...shit....40 quarts 2-3 weeks ago. I did the water bath, worked fine. Had a couple not pop, most likely was too tight, or too loose...its just playing the numbers.
Good rings, new seals, in clean sterilized jars....waterbath should be fine. But Pressure pot is preferred, but on the same token, is harder on the jars and I often get breakage if im not using new or 2nd use jars.
