I need to program my new AFR gauge but I'm not sure what range to put in. Wondering what my low and my high should be, just the overall range of the gauge. Also it has a high or low warning feature and I'm not sure what to set that at either or which is more important (high or low).

For general gauge range, 10:1-20:1 is the norm for a wideband.

High/low limit...You don't really need either.

Even though stoich is 14.7:1, seeing a gauge reading of ~16:1 or so at idle/low-RPM cruising is normal, especially with some cam overlap.

When you put your foot on the go pedal, only then should the AFR readings hopefully drop into the 12-13:1 ballpark. This is the time when AFR matters, as far as concerns of running lean and potential engine damage.

So setting a high limit (lean) isn't all that beneficial because an unsafe (lean) AFR at WOT will be much less than what you'll probably find it idles/cruises at normally.
