And speaking of cooking, I didn't. However, I did make a sandwich for dinner. Here's what I have going:

Chibata loaf, baked fresh, sliced in half, and the insides pulled out some to make a big pocket.

Smoked chicken from yesterday's Mother's Day gig.

Roasted Elephant garlic/chipotle aioli with lime juice, smeared all over the inside of the bread.

Sliced red onion, sweet pickled jalapenos, provolone and pepper jack cheese, and baby greens.

Wrapped up in plastic wrap and foil, and currently sitting in the garage fridge with two heavy cast iron pans smooshing it all together. :D
