82 lbs of crawfish yesterday, ribs and sweet potatoes today.

We had 5-6 lbs left.

Yes, they are all the same.
While spell-check only recognizes "crayfish", I have always considered the proper spelling to be "crawfish".

Haven't had any crawfish in forever. Used to catch them in the creek in the woods behind my house, but after the droughts of the last 10-15 years I don't find them anymore except one in the swimming pool every now and then.

Love the crawdads. My favorite ones in the French Quarter are Acme Oyster House's. They are really good and spicy.

Of course. It is very good too. You really can't go wrong with either. But my favorite is this:

We farm and eat a lot of crayfish here in Arkansas, too. I just went to a boil last week. A dump truck load for 700 people!

I have a near impossible time getting crawdads here in Missouri but the few times I've managed I also add the liquid to spice it up more. For shrimp the packages do a fine job. Crawdads can handle more intensity IMO.

That stuff does add some very good aromatics, but if you want some heat, you'll have to add some of that orange-sawdust-lookin' stuff that comes in the yellow bag.
It's labeled as Louisiana Crab boil, or something like that.
I always add two of the Zatarain's bags and a bag of the crab boil, for batches to feed around 5-10 people. Add another bag of each if you're doing a larger batch.

With Louisiana, the longer you let the seafood and/or crawfish soak, the hotter it gets. I would imagine the same holds true with Zatarains's.

And then let it soak for about 30 min before dumping out on the table. We mix in mushrooms, lil smokies, corn, potatoes, and garlic cloves. man is it good :seasix:

Harrisburg, Arkansas has a great deal of crawfish farms. When I lived up there, that's where I bought them.
