if a recipe calls for 1 cup of white wine and i dont have any (and i cant run out to get any) what can i use instead?
im making Ol Timer's french onion soup... or trying to :willy:

1 cup Chicken Broth
or
1 cup of white grape juice + 2 teaspoons of vinegar.

Or
White wine Sweet or dry wine. Non-alcoholic wine, chicken broth or stock, diluted white wine vinegar or cider vinegar, white grape juice diluted with white wine vinegar, ginger ale, canned mushroom liquid, water. For marinades, substitute 1/4 cup vinegar plus 1 Tbsp sugar plus 1/4 cup water.

In think beef broth will work fine for onion soup.
could you substitute some of your laundry detergent?? :hide::leaving:

We use white wine and some cognac in our french onion soup in addition to the beef broth. I think the cognac adds a nice finish.

If the recipe calls for you to deglaze the pan with wine, the other liquids will work, but not as well. The alcohol in the wine really helps that process with it's volatility. There is also a cool little chemical reaction that the alcohol goes through that adds to the dish. Alcohol binds very quickly to fat in the pan so some of it does not boil off. The alcohol becomes a "flavor carrier" and thus enhances the flavor. Some chefs will not use alcohol for this reason, if an alcohol-free end result is desired. They will actually boil the wine prior to using it so that no alcohol remains.:cry:
French onion soup is pretty hardy. You could add a bit of brandy or similar to the stock and get a nice deglaze and get the benefit of the alcohol.

Two tablespoons of red wine vinegar should do. You could also add a dash of balsamic vinegar with yous stock. You just need a tiny bit of zip (acid).:cheers:
apple cider vin would also work.

All the suggestions here will work. You are not deglazing, as you already have a nice roux by the time you add the wine. It is for flavor, and I've made it without when I didn't have wine. I just added a little more broth.
If you decide to try laundry detergent, I'd recommend liquid rather than powder!
