Chicken thighs are probably the cheapest cut of cluck right now, and have great flavor. But I hate that most of the seasoning goes on the skin and if you're trying to cut down on the fat, ends up in the trash.
Soooo, what I do is peel the thighs of all skin and fat, season with whatever you like, I use a garlic, lemon pepper shake, topped with 2 half strips of bacon, and bake for an hour on a raised rack pan at 350*. Tender, lots of flavor, and not dried out like normal skinless baked chicken. Bacon is very crisp. Try it, and let me know how you like it.
