I can do it with some Tapioca Maltodextrin. It is a compound that allows you to turn high fat liquids into a powder.

All I would have to do is take the bacon fat and mix it at a 60/40 ratio until I get what I need and then I can mix that in with a standard gelatin in order to make the "jello" you are searching for. Might be a fun project.

Seems like a natural combo to me! Except for cherry, what other good Jell-O flavors are there, anyway?
