I, too, am guilty of not posting in this section. At Kerrmudgeon's prodding, I'll do better.
Onion Baked Potatoes
Slice you favorite baking potatoes crosswise about every 3/8", but not all the way through. The idea is to be able to "fan" them."
Place the potatoes on a piece of aluminum foil to make the following steps easier and to contain the ingredients.
Alternate a pat of butter and a slice of onion in the slits. Salt and pepper to taste, and wrap the potatoes in the foil.
Bake at 425 for an hour. You want to almost burn the bottoms of the potatoes to caramelize the butter and make the potato stick to the foil. Serve with more butter. You'll never go back to plain baked potatoes!
