12” roast beef hoagie here. Cheddar, lettuce, tomato, onions, banana peppers, and mayo. Really hit the spot.

Corned beef has never been my favorite. I had that epiphany several years ago. I guess I just kept making it out of tradition. My grandmother made it and it was always a big, family meal/get together for St. Patrick’s day. One day I thought, I don’t even really like this. Why do I keep making it? :funny:

I do make a corned beef and cabbage soup which is pretty good. But the broth and vegetables make the corned beef less overpowering. And Ruben sandwiches are my favorite sandwich. Apparently, I like corned beef in combination with other ingredients as opposed to just cutting it up and eating it as its own entree. :shrug: 🤔

Instead of corned beef, I’ve been making Dublin Coddle for St. Patrick’s day. I swap out potatoes for turnips to reduce the carbs.

I worked at a nice Irish Tavern as a teen. They’d make the same turnips with chopped bacon, with corned beef and cabbage. I like a wedge of cabbage cooked well done!

I have one that looks just like that. Paid a bit over $100 for the unit and an extra blade touted for dairy and veggie cutting.

Roast beef, Corned beef, Pork loin, SPAM and meatloaf handled perfectly.

In all seriousness, I have been documenting recipes with pictures lately because my mom and my aunts like to try new things but they’re not as great with written recipes anymore. Eye sight isn’t what it used to be. ;) As they get older, the pictures are super helpful. :grouphug:

Also, I have a recipe journal with hand written recipes from my grandmother and my mom. My grandmother started it and when my mom comes to visit, we add more. There are even recipe cards stuck in there from my Great Grandmother; all hand written.

Anyhow, my mom and I have also been hand writing recipes in the book. But my mom’s writing has been getting a little shaky recently. She enjoys working on the recipe book together and I would never say anything to make her think twice about it. So, I’ve been including pictures for both the old and new recipes just to make it a little easier. :D

Turnips are one of my favorite vegetables. When I was a kid, we had extended family meals ever Sunday, typically ten of us. My grandmother would prepare turnips and only she and I liked them.

Same. I love them!

I use them in place of potatoes quite a lot. I make turnips au gratin for Easter. Goes nicely with the ham. The secret for that recipe is to get them sliced nice and thin. Once I got a mandolin to slice them, it was much better.

I like them roasted. I use the convection setting in my oven. Cut them up in 1” chunks and toss them in avocado oil and then Tony Chachere’s Bold Creole Seasoning. Spread them out on a greased baking sheet. (I like using a baking sheet covered with a silicon mat.) 325° until fork tender. Maybe stir them a few times to get them golden all around. Very good.

:iagree: A great sandwich is made that way, but I tend to use pepper jack v. swiss. There used to be a sandwich place in New Jersey which piled the meats high and had a pickle bar. One could make 3 or 4 sandwiches with extra rye from the pickle bar, which left plenty for a midnight snack. A doggie bag was a given. Harold's Deli was the place.

I know Harold. He made me a custom chocolate cake for Mrs' Rickles 50th Birthday party. I had the party at one of old regular stops, nice Italian joint. Hours before the party I dropped off this monstrous cake took up half the walk in! Not kidding you can't imagine the size of the cake.

After celebrating with our family, there was so much cake left over I asked the owner and we gave the entire place free dessert, on me!

Anyway, you are spot on! The size of the servings there are the largest that I' have ever seen. Don't mistake a turkey sandwich with fries might cost 75.00. The plate of fries think yaba daba dooo!

On my grandfather's Thursday huckster route, one of his customers was a nice Jewish lady who gave me a homemade bagel with cream cheese every time I was with. ( helped out on his route from age 9 to 16 )

Holidays whether Jewish or Christian and she would add lox. :drool:

Btw- my Italian catholic mom never ate meat on Friday in her entire life.

So back on topic! Earlier I’d said that I wish that I had a meat slicer. I’m kinda glad now that I didn’t use one! The irregular cuts, different size pieces made it much more authentic. Some thin, some thicker, some small some full slab.

See I’d expected the piece to be more flat like a brisket flat cut. This pastrami was a huge roast cut. I’m going see exactly what my favorite deli uses!

Ended up with 8 one lb. sealed packages. Hell I think we went thru 4 lbs already. Froze the rest.

And as a gift from my butcher he through in 5lbs of chicken wings! Mrs Rickles nailed it! OMG! With blue cheese dip!

I never told you what to believe......I can with 100% certainty say that both historical and archeological evidence proves that Jesus of Nazareth was a real person who walked this earth..that is a fact, not a belief. Now you can chose not to believe that; there are people who chose to believe the earth is flat.

i use mine to cut thick slices of tomatoes when I am making them into sauce, butusually do a couple hundred pounds at a time, though.

I watched a friend shave off his palm while cleaning a slicer at O'malley's Tavern as a teen.

But I do want one.

Heck, Just for cheeses! I can see plenty of uses meats, veggies etc. but we really have a limited amount of storage....The tiny closets we have are bursting at the seams.....

We use a slicer to do thin sliced ribeye steak for philly cheesesteaks with peppers and onions, mushrooms, on the flat top grill; provolone and brown gravy.......they are insanely good.........!

I have a Rival that looks pretty much exactly the same. Bought around 1985, used a handful of times. Because it's a real SOB to clean each time. Now I just use very sharp knives and a steady hand. :cert:

This, is how it's done! :yesnod: Triple Lindy using 2 pieces of Rye with one black bread in the center. Heated the pastrami first then layered with homemade russian dressing, homemade coleslaw, spicy mustard, lacy swiss and the pastrami. A couple of Mrs. Rickles garlic parm bagel chips. Grillos pickles not shown....

yes that is me. That store is from the sopranos, so not real pork store. Before HBO took it over it was west hudson auto parts, i got my exhaust setup there for my 87 Buick Turbo T.

All the Authentic Fish and Chip restaurants are gone from Kearny as well. The area has flipped with a new wave of immigrants.

The pork store building was torn down about 18 years ago and it's a parking lot. They were going to put up an apartment building and call it The Soprano
