I picked other - hand tossed. My most favorite pizza was DeLuca's in Lansing, MI, but unfortunately they closed a couple of years ago.

I like thin, BUT NOT paper thin.
I will accept a thicker crust than thin, BUT NOT much thicker.
Pan crusts and fat crusts are not my thing.

I waited over an hour once in shitcargo for their deep dish, terrible, rip-off, would not do again.

We bought an Ooni Koda a couple of years ago and really enjoy making our own pies right at home. At 700 degrees, you can cook a pizza in a minute and a half.

Nah. Too lazy for all of that. Grocery store sells bags of dough in the deli section. It's made fresh and it turns out fine.

Oh, sure, I could pull out my Kitchen Aid and slap the dough blade on it, but it seems a lot of work when the bags of dough are sitting right there already made.


It's really hard to screw up a pizza with the Ooni.

A pizza oven is a recent topic at our place. I’ve been considering building a wood oven, on our back patio. I have piles of stone, river rock, bricks, Belgium block, slates….etc.

I’d need the fire brick and a chimney flue.

I think the Chicago style "Pizza" has wandered too far off the reservation and requires a new food type category designation. When I think of pizza I think of something you can safely carry in an old style 1960's pizza box made from paperboard.

I do a cold rise in the fridge for 2-3 days. You might have to raise the fridge temp a few degrees if you keep it super cold. Definitely gives the crust some flavor. Sugar is completely unnecessary.

I thought about building a wood-fired oven. Lord knows I have the space. I even looked at some plans online. In the end, I realized that it would take hours to get a wood-fired oven heat soaked enough for good results and that, after all that work, I probably wouldn't feel like pizza anyway. In the end, turning the valve on and hitting the ignite button and waiting 15 minutes is much easier and less mess. Get an infrared temperature gun while you're at it so you can monitor the temp of the stone.

So build yourself a nice stone pizza oven and make sure you build a flat level work area adjacent to it. That's where you put the Ooni.

I'm not too particular. Corner gas station had some good pizza for a few years but then it went to hell when they changed owners. I was so sad about that but started shopping around. Apparently making good pizza isn't as easy as you'd think, WTF? :rofl: Finally found a place that makes fantastic "philly steak" pizza so those are what I eat these days.

Just had a Margherita Pizza yesterday at Grimaldi's in Tampa which is the closest to real NY thin crust Pizza in the area. Very few places here in FL have a decent crust.

My favorite pizza is far from the best. As a 15 year old, I worked at a pizza joint/bar and their pizza was the greasiest, cheapest in town. Simple ingredients and it left puddles of yellow grease/oil in its wake. It was soft and thin so you had to fold it over to eat it. Amazingly unhealthy and the best eats a teenager could ask for.

They'd let me drink beer after hours too.

They ended up adding onions. That ruined the burger for me.

So what you do is after slicing them is put them in a cold water bath for 10-15 minutes and it takes that away.

Make my own. Use Red Label Caputo 00 flour with a touch of Diastatic Malt Powder mixed in. I have a pizza steel which is amazing for perfectly cooked crust. Comes out great, family destroys it.

That’s how I make it as well…gotta have the 00 grade flour, buffalo milk mozzarella, san marzano tomatoes, fresh basil leaves :yesnod: if I want extra protein, I marinate chicken or steak in Italian herbs/balsamic vin/olive oil, grill, then rough-chop and throw it on. :yum: Not a fan of pepperoni, sausage, onions, anchovies, etc… :nonod:

I taught a yeast breads class years ago in NY which was several hours long…and we would make pizzas for our lunch break while waiting for the other dough recipes to proof/rise/etc. Good times :seasix:

If I’m feeling lazy, or just want someone else to make it for me for a change :Jeff '79: , I thankfully have an authentic Neapolitan place that is just 5 minutes away…they have the VPN certification as well :cool:

I use to buy 00 Caputo but the price up here has got out of hand about twice the cost of regular flour. Luckily our AP flour has a high protein of 12% and bread flour almost 13%. Buffalo Mozza and Basil impossible to find in the sticks. Dried Basil taste disgusting and I'll never use it.
San Marzano are pretty much standard but after watching a lot of videos on comparisons I've started trying others again at half the price ($3 compared to $6) here.

Looks awesome but unless I'm cutting up bread to put on top of a stew I just don't enjoy such hard crusts. I prefer a softer crust.

Eddie & Sams at Downtown.. Good Pizza but I like Grimaldi's Pizza better..
Crust at Grimaldi's is crispier and thinner than Eddie & Sam's. Eddie & Sam's make good Pizza, just not as good as Grimaldi's. Grimaldi's is the same Grimaldi's that is right in front of the Brooklyn bridge in NYC.

in the order of importance for me

1) Thin, no flop crust, well done
2) sauce
3) cheese

It's all about the crust and the cheese.. Any decent Mozzarella works fine BUT the best Mozzarella for Pizza is WHOLE MILK Mozzarella.

San Marzano Tomatoes make the best sauce, no doubt. That's all I use for my Pizza sauce..

I make my own sauce for pizza and spaghetti, but also let it sit in the jars for a few months with fresh, uncooked, unheated basil in them. roma 'maters work just fine, too.

Never tried ROMA tomatoes for Pizza.. Will give them a try to see how it tastes compared to San Marzano. Would save a bunch of money if they are just as good as San Marzano tomatoes are quite pricey.

Anyone who thinks "Chicago-style pizza" is actually pizza, needs to figure some life-shit out. It's kind of like folks who think "Pizza Hut" serves pizza, they don't. It's just a salty, greasy, sloppy mess, that if you are at the appropriate level of drunkeness at the time it is consumed, tastes OK. But is DEFINITELY NOT PIZZA!

Anyone who thinks "Chicago-style pizza" is actually pizza, needs to figure some life-shit out. It's kind of like folks who think "Pizza Hut" serves pizza, they don't. It's just a salty, greasy, sloppy mess, that if you are at the appropriate level of drunkeness at the time it is consumed, tastes OK. But is DEFINITELY NOT PIZZA!

Try McDonalds Pizza. The world's largest McDonalds in Orlando serves Pizza. I'm a Pizza lover and I would recommend anyone who likes Pizza to stay away from that Pizza.

Would love to find a Calzone cooked in a wood fired pizza stove, lightly dusted with Olive oil. Some of the best I've ever had was in Sigonella Sicily outside NAS 2. I'd fly back there just to get another Calzone one day. The pepperoni and cheese were amazing with the sauce in the Calzone.

just made Grandma Pizza.. Changed my recipe slightly and it turned out great. Best Pizza I ever made. I need Portnoy to come and judge my Pizza..
