Actually its not "instant", IIRC there was a noble during the French revolution that told a friend he would blink as many times as he could after he was beheaded to indicate consciousness until death. I believe he blinked 13 times.

Read the Papillion books, the movie doesn't begin to do credit to the original work(s).
