I wound up with about 5 pounds of black drum. I have no experience with this fish and hope y'all will share your favorite recipes using this fish. It is safely in the freezer waiting the best sounding concoction. Thanks for sharing!

Just looking at some of the recipes, seems most sear or blacken it and serve with veggies.

I'd eat any fish, and I will prove it.
In 2002 I was in Atsugi, Japan, and ate blowfish. The Marines on my table looked like this:

It's called Fugu and I also was in Japan and had it with the president of Sony.

Got older in a religious house, seems lent was about 2/3 of a given year, on and off one excuse or another.....ate so much fish and crab, I got tired of it to the point, I have eaten fish or crab maybe 2 dozen times in the last ~50 years.....

I'm in Texas, so my answer is always the same, no matter what food we are talking about, from fish to Twinkies......deep fry that sucker.
Dip the fillets in milk, then bread with cornmeal, mixed with cayenne pepper and Tony Chachere's. Drop in fryer. Retrieve from fryer. Enjoy!
Just be careful about the bones, it has a lot of little ones, you probably won't be able to fillet them all out.
My favorite is Thai style fried with chili sauce and onions.

Black drum is most suited to baking, broiling, sauteing, or grilling. I'd thaw out a pound or less and try pan frying it in butter and olive oil, toss some whole garlic cloves in with the fish. Season it with salt and pepper before sauteing and serve it with some butter/lemon/dill sauce and see how you like it. Cayenne if you like it either in the seasoning or the sauce. Try to get a nice crisp texture to the outside but don't overcook. Would be best if you did this on an outside burner if you have one, or at least have a good outside-vented range hood cranked up. Get the fish fillets as dry as possible before cooking.

If you've fish a couple dozen times in the past 50 years, you've got me beat. Can't stand the smell- won't even let any in the house. Probably same reason- too many meat-free Friday's growing up.
