Ice box, that is. Almost 400 lbs of meat. Just picked up beef from the meat processors. Our neighbor plants alfalfa on some of our land for his steer. We don't charge him rent, so when he takes the steer in the fall to be butchered all we do is pay for the processing. :cert:

Looks like a 2 year supply to me.....bet it's better than the crap we get at the stores here in NE Florida......here Fl. supposed to be in Tejas league for cattle and cows, never know it as the store bought beef totally sux.....too much grease and very little taste......

Now go to a restaurant, and it's all fine...even a Wattaburger....so go figger....

I guess all our good beef goes to feed Wash DC region......

OMG....that would last me for a few years! :yum:

Does the butcher age it for a few weeks before he butchers it? :bigears:

In the 60s my dad's union local used to go to the county fair and buy the 4H winning beef on the hoof, have it butchered and raffle it off in four quarters. One year my dad won a hind quarter. Best beef I ever ate in my life.:yesnod:

:iagree: Not a lot of fat, but still with a lot of flavor.

As a person who comes from many generations of meat cutters, both diet and hang time sound like you will be enjoying some very fine beef :yesnod:

Enjoy

:iagree: Since we moved here in '08, we haven't had the need to buy beef from the stores. Now, we just need to get a local pig farmer. (minus the smell  )

I assisted a meat cutter during one year of college. Learned a lot. There are a few things I still won't eat. Head cheese, beef tongue. brains, etc.... http://img.photobucket.com/albums/v288/Superstreet/puke2.gif

Uncle had a huge dairy farm of Holsteins, but as he got older his kids didn't want to take over, so he sold all of the cows and most of his land. :(
