Default Candied Pumpkin Rind

Got the recipe from a Canadian friend. Have to wait till next Fall to give it a try. An online search didn't turn up much but something similar is performed using orange, lemon, and lime rinds. Those pictures look great.

Here's what she E-mailed me -

Just boil it in sugar water with cinnamon and cloves for an hour or so, then put the rind in a dehydrator or in the oven until they firm up.

Taste real yummy!!!!

My mother makes these kinds of things with all different sorts of peels and fruits and walnuts.

She boils them as above in your email.
Then they go in to jars with a simple syrup and sit for weeks or months.

You pour an ice cold glass of water.
Take a candied piece out of the jar and dip it in the water before you bite in to it.
Water helps to wash some of the sweetness away.

It's done a lot with the white of different melons as well as the skins of oranges. As long as it's about 1/4" thick it works.
