Neighborhood cameras police tracking the local streets have this somewhere on video. There's normally a very limited few roads leading out of a township, usually only a handful. A township can be locked down with few police cars on each of these roads when it has to be done. They have to have footage.

First and foremost, I'd do what I need to do in the garage to get two cars to fit inside, ASAP. Unfortunately, your suggestions to harden the garage are probably very reasonable, and I'd add an alarm and motion sensors that alert inside the house, to any movement on the driveway. If there's a cat, or possum, or a car thief, you should be immediately alerted inside, loud enough to wake you up.

Then there's the cars themselves. You'd mentioned kill switches. I'd do that, along with signing up for Onstar if you eventually get that black Vette, so it can maybe be tracked/shut down. The Apple air tag thing seems like a decent idea, too. I've seen Youtube videos of people tracking down their stuff that way. And surely there's better car alarms out there than the factory alarms that obviously got beaten on both the Chevy and the Dodge. Maybe break out that 80's nostalgia device, "The Club?" I used one back in the early 90's when car theft was bad in Houston. It actually saved me once. They broke in, took some shit, and you could tell they tried to bend the steering wheel, but the Club attaching the steering wheel to the brake pedal saved the day. They obviously weren't expecting that, because those are easy to defeat, too, if you bring the right stuff.
