You know how many "good people" (and friends) I caught over the years stealing from my restaurant?.......all of them! Keep them honest. Each bartender should do his own count after every shift. Cameras and a few changing "watchers"....just like the casinos use.
Good luck with your dream venture. It's one of the hardest businesses to run successfully there is. And remember that every place has a half life, after that it becomes old hat, and it's time to SELL before that slide begins, while at the top.
